Súp cua (Crab soup) is a specialty of Sai Gon that you can’t easily find in any other streets of Viet Nam. Crab meat is of course the main ingredient of this soup. You can see the fibers of crab meat in a bowl of soup. But more than that, this kind of soup has also mushroom, fibers of egg, shredded chicken, a boiled quail egg and onion. Some vendors put some fried pieces of bread when serving. This soup is hot and spicy (if you put a little chili or pepper into it).
In some provinces in Vietnam, this soup is served in party where called Súp măng cua. Because it is easy to be cooked and the most familiar soup, it is easily became the most favorite one for many people, specially the children.
